Molkenpulver, entzuckert
Molkenpulver wird durch Trocknung von Käseschotte hergestellt.
Durch Filtrationsprozesse vor dem Trocknen lassen sich Mineralstoffe (z.B. Natrium) entfernen, wenn sie nicht erwünscht sind ("entmineralisiertes Molkenpulver").
Hauptbestandteil ist die Lactose. Die biologische Wertigkeit des vorhandenen Molkenproteins ist hoch, ähnlich wie diejenige der Vollmilch. Molkenpulver zählt zu den energiereichen Futtermitteln.
Bei dem teilentzuckertem Molkenpulver wird ein Teil der Laktose entzogen.
